Blueberry Sauce

Ingredients:

1 Cup (250 mL) Wild Blueberries
2 Tbsps (60 mL) Maple Syrup or Honey
1 Tbsp (15 mL) Lemon Juice
1 Tsp (5 mL) Corn Starch, dissolved in a small amount of water

 

Preparation:

1. Combine ingredients in a saucepan.
2. Bring to a boil.
3. Simmer 2 minutes, stirring occasionally.  Set aside to cool.

Serve over pancakes or cake with a scoop of vanilla or maple walnut ice cream.

Makes 1 cup (250mL) of sauce
